Salsa, Salsa, Salsa, Guac!

No i haven’t reinvented the game duck, duck, goose, although I do believe salsa, salsa, guac, would be a lot more fun.

I have however created for you all the extras you need in order to make your next Mexican feast that little bit, well, extra.

Oh, and delicious.

With 3 homemade salsas, and a guacamole you will be sure to impress your guests, and honestly its just as easy as opening the jars.

Up first is your bog standard tomato salsa. Weirdly i don’t really like the taste of fresh tomato, so your average chopped up homemade salsas doesn’t really do it for me.

I looked around for how to get a salsa that was more like a jarred one.

The answer, plum tomatoes and a blender.

Tomato Salsa

Ingredients

1 tin of plum tomatoes
1 small onion
1 jalapeno
2 cloves of garlic
Half a lime
Teaspoon of oregano
Bunch of fresh coriander or 2 tablespoons of dried
Teaspoon of sugar
Salt and pepper to taste

There is no real method for this, its just a case of chop up your onion and jalapeno into chunks, don’t forget to deseed the jalapeno if you don’t want it to be spicy, then all in a blender and blend to your preferred chunkiness.

Habanero and Mango Salsa

This has that lovely heat that sneaks up on you, but the mango gives you a softer sweet tasting salsa overall.

Ingredients

1 tin of plum tomatoes
1 mango, ripe but not overly
1 red pepper
1 jalapeno
2 Habanero, we couldn’t find fresh so used a habanero paste from waitrose and used 2 teaspoons.
Bunch of coriander or 2 tablespoons of dried
Half a lime
Salt and pepper

Method

1. Chop up and deseed your pepper and jalapeno and roast until the skins are slightly blackened. If using fresh habanero do the same with them.

2. You will only need 3 of the plum tomatoes from the tin, add to your blender.

3. Add the roasted pepper, jalapeno, habanero, chopped up mango, coriander, juice of the lime and salt and pepper and blend to your preferred chunkiness.

Corn Salsa

This is delicious and honestly so moorish I’d make extra if i was you.

Ingredients

2 cans of corn
Half a medium red onion
1 jalapeno
70g of feta
3tbsp of sour cream
2tbsp of mayo
1tspn of chilli powder
Half a lime
Salt and pepper to taste

Method

1. In a small dish mix the sour cream, mayonnaise, chilli powder, lime juice and the salt and pepper.

2. Chop up your onion and jalapeno in to small chunks.

3. In a bowl add the sweetcorn, onion and jalapeno, crumble up the feta and then add your mixed dressing.

4. Mix together until fully coated and if you’re feeling fancy sprinkle on a little more chilli powder.

Guacamole

Ingredients

4 avocadoes
1 jalapeno
1 red onion
1 lime
Salt and pepper to taste

Method

1. Chop up your onion and jalapeno really small, depending on how chunky you want your guacamole to be.

2. Chop up your avocado into smallish chunks and add.

3. Squeeze in your lime and salt and pepper and mash together.

4. You can add a tablespoon of natural yogurt to make it a little creamy, or tomato tf you want to add a little sweetness.

Just a quick FYI, I’d say each recipe is a small parties worth of salsa so either half your recipes or have enough planned for the week to use it up.

We had ours with Pork Carnitas and Mushroom Fajitas, then Nachos, my mum had some with eggs for breakfast and then homemade Turkey burgers and wedges.
