Me and my mum are trying out a vegan diet for the week. Theres a lot in the shops at the moment so it seems like a great time to try it out.
Straight away i knew our first recipe would be these sweet potato burgers. We have made them a few times because they’re delicious and just so happen to be vegan.
We switched it up a little and turned them in to falafels and had them in a pitta with hummus and salad.
1 tin of black beans
4 medium sweet potatoes
1 bag of microwaveable quinoa, the quinoa and rice mixed bags are okay too
Half a teaspoon of the following
1. Cook your sweet potato at 180 for around 30min, depending on the size of the sweet potato, you want them to be soft, let cool for 10 min.
2. In a blender put your cooked sweet potato, the quinoa and the black beans, as well as all your herbs and spices, season to taste. Mix until a fairly smooth consistency.
3. Spoon out the mixture into a bowl and either take out small golfball sized balls to make falafel, or a larger handful to make burger patties.
4. Spray a little oil on the top and bake for 20 min, turn and spray with oil again and cook for another 10 minutes . If falafel spray bake for 10 min, shake, spray and bake for 10 min.
If eating as falafel i recommend teaming them with a pitta, or flatbread, spoon in some hummus, salad and enjoy.
Burgers, a spicy chipotle or sriracha mayonnaise with lettuce and red onion on a burger bun really hits the spot.
