Mediterranean Pasta

Yes, more pasta.

But pasta equals comfort, and quite frankly I’m all about the comfort food.

Also, this pasta is the perfect pasta for those that are wanting to leave home as little as possible because all the ingredients you can buy in a jar and they last forever.
It’s also full of those lovely Mediterranean flavours, so you can sit by your window, with a glass of wine while the sun shines through and pretend you’re on holiday, at least for 10 minutes.

All you need is:

A jar of sundried tomatoes
A jar of olives
A jar of artichokes

You can use any kind of the antipasti jars we all buy/get gifted for Christmas that have been left at the back of a cupboard.

I’ve not added any amounts because this is your bowl of pasta, add as much or as little of each ingredient as you like.

I really love olives so i always put in a few more extra.
The method is even more simple.

First, boil your pasta.

Get another pan warmed up ready for when your pasta is cooked. A minute before your pasta is ready add a little oil from one of your antipasti jars, then add the olives, artichokes and sundried tomatoes. Then chuck in your pasta, adding a little of your pasta water. Mix all together and serve, chucking chunks of feta on top.

Insanely delicious and insanely easy.
