
Our first trip has taken us to Mexico.
I love Mexican food and it’s something we eat often here, however diluted through America it may be, so i wanted to try something new to us.
Unfortunately we have been a little limited with ingredients, so a big pot of mole was out of our reach.
But luckily I’d not long had a small delivery of goodies which included, authentic corn tortillas, red and green salsa, refried beans and chipotle peppers in adobe.
A scan through Google at what we could make and we decided on, Chicken Tinga on Tostadas, accompanied by a pomegranate, raspberry and lemonade, tequila cocktail.

This recipe for Chicken Tinga is for the slow cooker, but you can do i quick version in a pan using shredded cooked chicken.
Serves 4-6
Ingredients
3 chicken breasts
1 tin of tomatoes
1 onion, chopped
2 garlic gloves
2-4 chipotle peppers in adobe
Tspn of oregano
Tspn of cumin powder
Oil for cooking
Salt and pepper to taste
Method
1. Fry your onions in oil for around 5 minutes before adding your oregano, cumin and garlic, fry for a few more minutes and add to your slow cooker.
2. Add your chicken and tomatoes, and 2 to 4 chipotle peppers depending on how jot you like it.
3. Put your slow cooker on low for 2 to 3 hours, or 1 to 2 on high, about half a hour before serving shred your chicken using two forks.


You can serve this with rice, tacos or in wraps. We served ours on Tostadas.
These are corn tortillas baked, fried or toasted to make them crispy.
The easiest way is to stick them in a frying pan with a little oil, fkipping as each side gets nice and crispy.
Then we assemble.
On your Tostadas you want to spread a layer of refried beans, a layer of salsa, guacamole, some lettuce, your chicken tinga, and lastly a crumble of feta or mozzarella cheese.


Now ideally these would have been served with a mojito, but again we are limited on ingredients. So we mixed a shot of tequila with 2 shots of pomegranate juice and half a can of raspberry and lemonade kombucha from remedy, which means this drink is definitely healthy.
If you cant get kombucha double up on the pomegranate juice and use tonic water.
